It's 2am in Malibu. You're shirtless. There are bongos. This tuna didn't ask to be here but it's exactly where it needs to be. Basically a tuna aguachile situation β€” avocado replaces mayo entirely, lime does the heavy lifting, and mango (yes, mango) creates a sweet-heat-brine combo with the Fishwife olive oil that is genuinely unhinged and completely correct. Serve on warm corn tortillas. That is the only answer.

Ingredients

For the smash: - 1 tin Fishwife Albacore Tuna in Olive Oil (do NOT drain β€” that oil is the universe's gift to you) - 1 ripe avocado, smashed not whipped (she needs to breathe) - 1 whole lime, juice AND zest β€” don't be stingy - 1 fresh jalapeΓ±o, minced (seeds in if you're living right, seeds out if you're not) - Β½ red onion, finely diced - Big handful fresh cilantro, stems and all (the stems are where the soul is) - Flaky salt - Pinch of cumin (whisper it in) - Pinch of smoked paprika - Splash of Valentina or Cholula

Optional but spiritually correct: - ΒΌ mango, diced small β€” trust the process - Toasted pepitas for crunch

For serving: - Warm corn tortillas (this is the only correct vessel)

Instructions

  1. Soak diced red onion in cold water for 5 minutes. Takes the aggression down without losing the flavor. Drain and set aside.
  2. Smash the avocado in a bowl β€” chunky, not smooth. Add tuna with all its olive oil. Fold in gently. Respect the flake.
  3. Add jalapeΓ±o, drained onion, cilantro, lime zest and juice. Add cumin, smoked paprika, hot sauce, salt. Fold in mango and pepitas if using.
  4. Taste. Close your eyes. Adjust. It'll tell you what it needs. More lime? More heat? Listen.
  5. Warm corn tortillas in a dry pan or directly over gas flame. Pile the tuna mix on top. Eat immediately.
