A hearty breakfast inspired by a friend's creationβsteel cut oats topped with caramelized bananas, walnuts, and a sprinkle of brown sugar for that extra crunch.
Ingredients
- 1 cup steel cut oats
- Pinch of salt
- 3 cups water (adjust as needed)
- Bananas, sliced on the bias
- Walnuts
- 1β2 teaspoons brown sugar
Instructions
- Heat a heavy pot over medium-high heat. Add the steel cut oats and a pinch of salt, stirring until they start to pop and toast.
- Gradually add water (or add boiling water prepared separately) until the mixture reaches a rolling boil; then reduce the heat, stir, and cover.
- Set a timer for 45β60 minutes, stirring occasionally and adding water if needed.
- Meanwhile, slice the bananas on the bias, measure out walnuts and brown sugar.
- Once the oats are done, stir well and portion into individual ovenproof bowls.
- Top each serving with bananas, walnuts, and brown sugar.
- Place the bowls under a broiler for about 5β7 minutes, watching closely until the brown sugar caramelizes lightly.
- Remove carefully, let cool for a few minutes, and serveβwith fresh berries if desired.
