  1. Heat a heavy pot over medium-high heat. Add the steel cut oats and a pinch of salt, stirring until they start to pop and toast.
  2. Gradually add water (or add boiling water prepared separately) until the mixture reaches a rolling boil; then reduce the heat, stir, and cover.
  3. Set a timer for 45–60 minutes, stirring occasionally and adding water if needed.
  4. Meanwhile, slice the bananas on the bias, measure out walnuts and brown sugar.
  5. Once the oats are done, stir well and portion into individual ovenproof bowls.
  6. Top each serving with bananas, walnuts, and brown sugar.
  7. Place the bowls under a broiler for about 5–7 minutes, watching closely until the brown sugar caramelizes lightly.
