Ingredients
- 2 lbs tomatillos, husks removed
- 4 large pasilla peppers
- 1 serrano pepper
- 1 large sweet onion, peeled and halved
- 1 cup cilantro leaves
- Juice of 3 limes
- ΒΎ teaspoon kosher salt
Instructions
- Preheat your grill.
- Grill the tomatillos, peppers, and onion until well charred, turning occasionally.
- Allow the veggies to cool until safe to handle.
- De-seed the peppers and scrape off most of the charred skin.
- Combine the grilled vegetables, cilantro, lime juice, and salt in a bowl.
- Process with an immersion blender until you reach your desired consistency.
