A vibrant, spicy salsa made with soaked guajillo chilies and tomatoesβperfect for adding a kick to any meal.
Ingredients
- 12 guajillo chilies
- 1 (28 oz) can whole Roma tomatoes
- 1 bunch cilantro
- Β½ yellow onion
- 2 cloves garlic
- Juice of 3 limes
- Salt, to taste
- Pepper, to taste
Instructions
- Soak the guajillo chilies in boiling water for 30 minutes.
- Remove stems and seeds once softened.
- In a blender, combine the chilies, tomatoes, cilantro, onion, garlic, and lime juice.
- Blend until smooth, then season with salt and pepper.
- Chill in the refrigerator for the flavors to meld.
