A make-ahead mocha pot โ chia does the pudding work while a shot of espresso drags the Greek yogurt somewhere between tiramisu and breakfast. Layer it, dust it, forget it for two hours. No cook, no fuss, 16g protein and enough caffeine to make it honest. โ๐ฅ
Ingredients
- 3 tbsp chia seeds
- 1 cup Greek yogurt (nonfat)
- 1 shot strong coffee / espresso (~30 ml), cooled
- 1โ2 tbsp raw honey
- 1 tsp cocoa powder, for dusting
Instructions
- Whisk the base:
- Stir the chia seeds into the Greek yogurt with the honey until evenly combined.
- Splash in the cooled espresso and fold through โ you want it marbled, not beige.
- Layer:
- Spoon into two glasses or jars, layering the mix (add a plain yogurt layer between if you want the stripes).
- Chill:
- Cover and refrigerate at least 2 hours (overnight is better) so the chia swells to pudding.
- Finish:
- Dust the tops with cocoa powder just before serving.
