Rainbow Roasted Veggie Board

Notes

A showstopper sharing board built around four roasted vegetables arranged by color, draped over a cloud of whipped feta and finished with three distinct honeys. The chili honey does most of the heavy lifting โ€” drizzle it last and liberally. Serves well warm or at room temperature, which makes it a great dinner party opener.

Ingredients

For the Vegetables: - 3โ€“4 carrots, peeled and cut lengthwise - 2 zucchinis, thick sliced - 1 small cauliflower, cut into florets - 2 beets, roasted and sliced - 4 tbsp olive oil - 1 tsp salt - ยฝ tsp black pepper

For the Whipped Feta: - 200g feta cheese - ยพ cup Greek yogurt - 2 tbsp olive oil - 1 tbsp lemon juice

Three Honeys: - 2 tbsp honey (classic โ€” straight up) - 2 tbsp honey + 1 tsp chili flakes (chili honey) - 2 tbsp honey + 1 tbsp lemon or orange juice (citrus honey)

Garnish: - Fresh herbs โ€” parsley, thyme, or dill - Sesame seeds or crushed nuts - Cracked black pepper

Instructions

  1. Roast the vegetables:
  2. Preheat oven to 425ยฐF (220ยฐC).
  3. Arrange carrots, zucchini, cauliflower, and beets on baking trays โ€” beets on their own tray unless you want everything purple.
  4. Drizzle with olive oil, salt, and pepper.
  5. Roast 25โ€“35 minutes until caramelized and slightly crispy at the edges.

  6. Make the whipped feta:

  7. Blend feta, Greek yogurt, olive oil, and lemon juice until smooth and fluffy. Food processor works best โ€” blender is fine. Taste and adjust lemon.

  8. Prep the three honeys:

  9. Leave one plain.
  10. Mix one with chili flakes.
  11. Mix one with citrus juice (warm it slightly if it doesn't blend easily).

  12. Build the board:

  13. Spread whipped feta across one side of the serving board in a thick swoosh.
  14. Arrange roasted vegetables in colorful sections โ€” think rainbow order, don't stress it.
  15. Drizzle each section with a different honey.
  16. Finish with herbs, seeds/nuts, and a crack of black pepper.

  17. Serve warm.
