Solo dinner glory. Steak crusted in prickly ash, miso butter udon, punchy scallion sauce, and that rich raw yolk moment. Inspired by the vibes from @cabbages on Instagram. Big flavors, low effort.
Ingredients
Steak
- 1 thick-cut sirloin
- 1 tsp Sichuan peppercorns
- 1 tsp black peppercorns
- Salt
- Butter (for basting)
Miso Udon
- 1 packet udon noodles
- 1 tbsp white miso paste
- 1 tbsp butter
- Squeeze of lemon juice
Spring Onion Sauce
- 1 bunch spring onions, sliced
- 2 tsp soy sauce
- 1 tbsp sugar
- Pinch of white pepper
- Squeeze of lemon juice
- 1 tbsp olive oil
- 1 tbsp toasted sesame dressing (or sesame oil + mayo)
To Serve
- 1 raw egg yolk
- Kimchi on the side

- Toast and grind the peppercorns. Season steak with mix + salt.
