Ingredients
- 3 (14 oz) cans beans, drained and rinsed
- ~12 oz marinara sauce
- ~4 cups vegetable broth
- ~1 cup dry small soup pasta (e.g., Small Shells No. 52)
- 2β3 large handfuls of kale, chopped
Instructions
- In a large soup pot, combine the marinara, beans, and 3 cups of broth. Reserve 1 cup of broth for thinning if needed. Bring to a boil while stirring.
- Add the pasta and cook according to package instructions (roughly 10 minutes).
- Once the pasta is done, turn off the heat, add the kale, cover, and let sit for 10 minutes.
